The creation of POT AU PHỞ heralds the next chapter of Chef Peter’s decade-long quest to elevate phở, Vietnam’s national dish to new heights.
POT AU PHỞ is a modern phở restaurant inspired by French culinary culture with 14 bar seats and an intimate, open kitchen where guests experience the chefs in action. Expect a menu of flavorful small plates and sophisticated phở. Le Chef Tasting Menu is a pho culinary experience composing of 10 creative dishes such as Caviar Egg Phở, Molecular Phở Pâté Chaud and Phở Bò.
This phở noodle restaurant is close to Chef Peter’s heart and pays homage to his first restaurant in Hong Kong, a small pho noodle bar, which he opened more than a decade ago. POT AU PHỞ menu also pays tribute to Chef Peter’s mother who runs a traditional noodle shop in Dalat in central Vietnam famous for her Mì Quảng prawn & pork turmeric noodle soup. A modern interpretation of Mom’s Mì Quảng Noodle is also on the menu.
Culinary historians believe that phở originated from Nam Dinh city in the north of Vietnam more than a century ago and that the word “phở” came from “feu” the French word for fire. This iconic Vietnamese national dish is believed to have been adapted from the rustic French beef stew dish called “pot au feu”. The restaurant’s signature dish, Le Pot Au Phở, is inspired by Chef Paul Bocuse’ legendary Black Truffle V.G.E Soup which was created some 45 years ago.
POT AU PHỞ was recognized as one the BEST NEW RESTAURANTS IN THE WORLD 2024 by Condé Nast Traveller.
