Sabi Omakase Restaurant is located on the 25th floor of Centec Tower in the heart of Ho Chi Minh City, offering an elevated panoramic view of the urban landscape. Against this backdrop, we created a sky omakase model called Sabi, where the dining and spatial experience is elevated to a new conceptual level. The core design concept originates from Kuro-shari — the soul of Sabi — in which the rice is seasoned with long-aged black vinegar made from brown rice and blended with binchotan charcoal powder, an activated charcoal known for its ability to purify impurities and heavy metals in seafood. This spirit is translated into a space enveloped in mysterious black tones, extending from the entrance pathway to the main dining room, creating an atmosphere of stillness, focus, and refinement. The main layout is organized through concentric curves inspired directly by the form of binchotan charcoal, guiding movement in a gentle and continuous flow. The highlight material is carved wood finished with natural black oil, evoking the raw texture of black charcoal and completing a space that is contemplative, minimalist, and deeply rooted in the philosophy of omakase cuisine.
